Grape varieties: Sangiovese 100%;
Area of production: San Lorenzo Suvereto;
Production per hectare: 50 quintals;
Aging: 1° week of october;
Wine making: the grapes are fermented in small, 30 hectolitre vats, a process characterised by a long period of maceration;
Maturing and refining: 4 month in stainless-steel vats followed by 15 months in small oak butts, and at least 4 months in the bottle.

Aging:1° week of october;
Wine making: fermentation in small tray, with long maceration;
Maturing and refining: 24 months in small oak butts, following at least 10 months in the bottle.

Grape varieties: Aleatico 100%;
Area of production: San Lorenzo Suvereto;
Production per plant: 900 grams;
Resa uva vino: 25%;
Aging: end of september;
Drying: on mats in a shaded, well ventilated room;
Vinification: dried grape separated from stalk completely manually, fermentation in casks.

Tuscan I.G.T. (mark guaranteeing the quality and the origin of the wine)

Grape varieties: Trebbiano 60%, Vermentino 40%;
Area of production: San Lorenzo Suvereto
Production per hectare: 75 quintals;
Aging: half september;
Wine making: the grapes are fermented without their stalks in small, thermostatically-controlled 30 hectolitre vats;
Maturing and refining: the wine is left 5 months in small stainless-steel vats.
